Avalos Unda, Linuskitchen, Linu Freddy

A traditional snack, Avalos Unda can be stored for 6 months at a stretch if prepared properly.

Ingredients for Avalos powder
1/2kg rice
3 cups coconut (grated)
1/4 teaspoon cumin seeds
Salt to taste

How To
Soak the rice in water for some time. Drain and powder the slightly damp rice. Sieve the flour and mix it with grated coconut thoroughly in a bowl. Add cumin seeds and salt and mix well. Cover the bowl with plastic wrap and set aside for 3 hours.

Lightly roast this mixture on a heavy skillet with the flame turned to medium. Keep stirring continuously till the mixture turns golden brown. Remove from fire, cool and sieve to remove any lumps. Powder the lumps (if any) and roast again and then add to the prepared avalos powder.

For Avalos Unda

1 cup sugar
1/2 cup water
1 tablespoon lemon juice
