Spinach Pinwheels, definitely a recipe that you need to try out when you are a vegetarian or like me, on lent. Like Puffy Dogs, this one is also pretty straightforward with minimal ingredients. However, the preparation time is more due to the additional steps involved here. If you have children who hate the word spinach, then these might just be the solution you were looking for as a harried mom!

Ingredients
200 gm spinach leaves
1 sheet of puff pastry
1 clove of garlic
100-150 gm cheddar cheese
50 gm mozzarella
A teaspoon of olive oil
Salt and pepper to taste


How To

Leave puff pastry out to thaw.

In a deep bottomed pan, warm olive oil and add crushed garlic and saute for a minute. Add the spinach leaves in the pan and allow them to wilt. Add salt and pepper to taste. I even added a little bit of parsely. Set aside to cool.

On a thawed sheet of puff pastry, spread this spinach evenly and sprinkle all of the cheddar cheese. Roll the pastry to resemble a log and keep it in the fridge for an hour to set.

After about 45 minutes, preheat the oven to 180 degrees. Take the spinach log from the fridge and slice it into equal sized wheels. Place these on a greased baking tray and sprinkle the parmesan on top. Bake for 10-12 minutes or until golden. Serve hot!
