Delicately flavoured, ghee rice (neichoru in malayalam) with chicken/beef roast is the ultimate comfort food for most Keralites. Easy to prepare, the irresistible aroma of this rice is guaranteed to make you a fan for life.
2 cup basmati rice (washed and soaked in water for 15 minutes)
1/2 cup ghee 1 cup onion, thinly sliced
1/4 cup raisins
1/4 cup cashew nuts
3-4 stick of half inch cinnamon sticks
4 cardamom pods
5 cups of boiling water
Salt to taste
How To Drain the rice and keep aside.
Heat the ghee and fry half of the onions till golden brown. Drain these on a paper napkin and keep aside.
Fry the raisins and cashew nuts in the remaining ghee and keep aside. Saute the cinnamon, cardamom and cloves in the same ghee along with the remaining onions. Add rice and sauté until it starts crackling. Now add water and cook over a low flame. When it starts to boil, add salt and cover and cook till the water gets absorbed. Its as simple as that! Garnish this yum ghee rice with fried onions, raisins and cashewnuts and serve with beef or chicken roast.
