Stir Fried Mushroom

Plato was spot on when he said “necessity is the mother of all invention”. I was experimenting with mushroom during lent season and ended up with this super easy stir fried mushroom dish.
 
Ingredients
200gm button mushrooms (cleaned and sliced)
1 large onion (sliced)
2-3 green chillies (cut into two pieces)
1/2 teaspoon ginger (chopped)
1/2 teaspoon garlic (chopped)
1 stalk of curry leaves
A pinch of turmeric powder
1/2 teaspoon coriander powder
1/2 to 1 teaspoon pepper powder (depending upon your spice level)
Salt to taste
1 tablespoon oil
 
How To
Heat half of the oil in a pan and add the sliced mushrooms and sauté on high heat until all the water has evaporated from the mushrooms. Keep aside.
 
Heat the remaining oil in the same pan and add the sliced onions. Add ginger, garlic, green chillies and curry leaves when the onion starts to caramelise. Saute for 3-4 minutes before adding the powders and salt. Mix well and saute on low flame for a couple of minutes. Now add the mushrooms and stir fry for a couple of minutes. Serve this piping hot stir fried mushroom with rotis.
 
Notes: You can even use this stir fried mushroom as a filling for a veg sandwich.
