Vettu/Fried Cake

I was catching up with a friend from college yesterday and the conversation invariably turned to the food we used to have from the college canteen and nearby thattukadas. And I got a sudden craving for this fried cake that we used to have while catching up over a piping hot cup of tea. While I was in the process of making this cake, my five year old wanted to help too and I gave her the job of vettufyng/cutting the cake pieces with a blunt knife. Well, now u know why the “vettu” is not that pronounced!
 
Ingredients
1 cup maida/all purpose flour
1/2 cup castor sugar
1 large egg
1 teaspoon baking powder
3-4 cardmamom
Oil for frying
 
How To
Mix and sieve together the dry ingreidents. Add the beaten egg in small quantities and mix well to get a firm, pliable dough. Add a small amount of water if required. Cover with a damp cloth and keep aside for 30 minutes.
 
Heat oil in a deep bottomed pan. Roll out the dough into a long log like shape and cut into equal sized pieces. Make two deep cuts on each piece like a cross. Deep fry these pieces on medium heat till golden brown. Drain off any excess oil on paper towels and enjoy with a piping hot cup of tea.

Notes: If stored airtight, these fried cakes will keep good for at least 2 weeks.
