Kerala Style Prawn Curry

It was a weekday and like usual I was thinking about what to prepare for dinner at the last minute. Since I had some prawns in the freezer, I decided to search for a quick and easy prawn curry. And voila, google throws up this Kerala Style Prawn Curry recipe from the Good Food website. The accompanying picture looked too delish to ignore and I ended up trying this one. A simple dish, it paired well with boiled basmati rice and was over in a jiffy!
 
Ingredients
250gm prawns (cleaned and deveined)
1 onion (sliced finely)
A small piece of ginger (chopped)
2 green chillies (split)
2 stalks of curry leaves
½ teaspoon turmeric
½ teaspoon freshly ground pepper
Salt to taste
1 teaspoon mustard seeds
½ teaspoon fenugreek seeds
150ml coconut milk
1 tablespoon sunflower oil
 
How To
Heat the oil in a heavy pan. Splutter mustard and fenugreek seeds. Add onion and ginger and saute till the onions turn translucent. Add the green chillies and curry leaves and saute for a couple of minutes. Add turmeric powder, pepper powder and salt and saute to mix well. Lastly add the prawns and pour in the coconut milk on medium heat and bring to a simmer, stirring conitnously. Cook for a couple of minutes until the prawns are cooked. Serve hot with boiled rice.
