Chakkakuru Mezhukkupuratti / Jackfruit Seed Stir-Fry

Chakkakuru mezhukkupuratti or jackfruit seed stir fry is another dish that reminds me of mom and home! Though it is a tad difficult to clean the jackfruit seeds, the end result is totally worth it.

 

Ingredients
A handful of Chakkakuru/Jackfruit seeds (about 15-20)
1/4 cup bite size pieces of coconut
8-10 small onions (sliced)
2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon pepper powder
Salt to taste
2 stalks of curry leaves
1/4 teaspoon mustard seeds
1/4 – 1/2 cup water
Coconut oil for frying
 
How To
Clean and slice the jackfruit seeds thinly. Add these to coconut pieces, half of the small onions, red chilli powder, turmeric powder, salt, curry leaves and water and boil on low flame till the seeds are cooked and dry and the water has evaporated. Keep aside.
 
Heat 2-3 tablespoon oil in a pan. Splutter mustard seeds and add the remaining shallots and saute for a couple of minutes. Add the jackfruit seed mixture and saute over low flame till the seeds are browned. Sprinkle the pepper powder and saute for a couple of minutes more. Serve hot with rice.

Notes: The pepper powder is required only if you like your stir-fry to be spicy!

    Do you ask me to boil coconut, seeds, turmeric powder et al and then add to the oil or do you want to boil only coconut and seeds?

    I will make a try at what you are explaining here:

    Boil water with grated coconut and seeds finely sliced.

    Then heat oil, sputter mustard and add the seeds and coconut.

    After stir frying for 2 minutes add turmeric powder and salt.

    Correct?

    Finally sprinkle with curry leaves. 😉

      First of all, the coconut is not grated, it should be bite size pieces (thengakothu to be precise). Just mix everything together (except for the pepper powder) and add 1/4 to 1/2 cup water and boil on low flame till cooked. The water should have evaporated fully. Now heat some oil in a pan and add splutter mustard seeds. Then add the boiled mix and saute on low flame till browned. Lastly add the pepper powder and saute again for a couple of minutes and you are done!!!!! Hope this clears all the doubts….
