Prawns fried rice is a popular item in almost all Chinese restaurants. This recipe is a spin-off of the chicken fried rice recipe posted in this website…
2 cups rice
4 cups water
¼ cup carrot (julienned)
¼ cup cabbage (sliced finely)
½ cup prawns
1 egg (scrambled)
1 tablespoon soya sauce
Salt to taste
1 teaspoon lemon juice
4 tablespoon oil
How To
Soak rice in water for 30 minutes. Drain the water completely. Boil water & keep aside. Heat 2 tablespoon of oil in a pan. Add rice and fry till the rice starts cracking. Add boiled water, lemon juice & salt. Remove from fire after water dries up & rice is cooked. Heat remaining oil in a wok & add the vegetables. Stir at high heat for 3-4 minutes. Add prawns and stir for a 3-4 minutes. Now add soya sauce & stir for 5 minutes. Add rice & mix well with vegetables and prawns and remove from fire. Serve hot.


Notes: The only difference between this Prawns Fried Rice recipe and chicken fried rice is the substitution of shredded chicken with prawns. Please note that while cooked chicken is used in chicken fried rice, prawns are not cooked beforehand as they require significantly less amount of cooking time.
