Masala Dosa

A popular South Indian breakfast item, Masala Dosa is essentially a dosa stuffed with a filling of potatoes.
 
Ingredients
For Dosa
2 cups raw rice
¾ cup urad dal (black gram)
¼ cup cooked rice
Salt to taste
 
How To
Wash and soak the raw rice and urad dal separately for 6 hours. Grind the raw rice to a fine consistency and keep aside. Grind the urad dal. Add the cooked rice to this and again grind for a couple of minutes. Mix the ground idly rice and urad dal thoroughly. Keep this batter in a warm place for 10 hours. Once the batter has risen, add salt and mix well. The batter should have a smooth pouring consistency.
 
For Masala
1 onion (chopped finely)
2 large potatoes (boiled, peeled & mashed)
2 green chillies
½ teaspoon mustard seeds
1 stalk of curry leaves
¼ teaspoon turmeric powder
Salt to taste
2 tablespoon oil
 
How To
Heat the oil in a pan. Splutter mustard seeds. Add onion, green chilli and curry leaves and sauté until the onion turns golden brown. Add turmeric powder and salt and sauté for a minute. Add the mashed potatoes and mix well. Keep aside.
 
Heat a non-stick tawa and pour a big spoonful of batter in the centre. Spread this batter with the back of a spoon. Pour a teaspoon of oil over it. Cook on both sides, if desired. Place a tablespoon of masala in the centre. Fold the dosa into a triangle so that the masala is covered. When the dosa is crisp and cooked, remove from the tawa with a spatula. Serve this masala dosa hot with coconut chutney and sambar.
