I am sure everybody who has stayed in a hostel has fond memories of diamond cuts parceled from home!!!
½ cup butter
¼ cup sugar
2 cup flour
1 tablespoon milk
¼ tsp salt
Oil for frying
Beat sugar and butterin a bowl. Add the egg and mix well. Sift flour and salt and mix evenly with the egg, sugar and butter mixture. Add milk and knead to form a soft dough. Roll out the dough thinly using a rolling pin. Cut out diamond shapes and deep fry in hot oil until golden brown.
Notes: These diamond cuts can be stored in an airtight container at room temperature for up to a week. About 30 medium sized diamond cuts can be made with this dough.
