This easy coconut blondie cake recipe is perfect for special occasions!!!
 
Ingredients
1) 1 cup butter
1 ½ cup brown sugar
4 eggs
2 teaspoon baking powder
2 teaspoon vanilla essence
2) 2 cup flour
3) ¾ cup coconut (grated)
 
How To
Preheat oven to 160 degree celsius. Grease an 8 inch cake tin. Dust the greased tin with flour until well coated. Mix number 1 ingredients at high speed for 5 minutes in the large bowl of your mixer. Add flour to this mix and again grind, but at low speed till the mix becomes smooth. Add grated coconut to this batter and mix evenly with a wooden spoon. Pour the batter into the cake tin and bake for about 30-40 minutes or until a skewer inserted into the centre comes out clean.

Notes: This Coconut Blondie Cake can be stored in an air tight container at room temperature for 2-3 days.
