Cabbage Thoran (Cabbage Stir Fry)

A simple Kerala dish, cabbage thoran goes well with red rice, moru kachiyathu and fish fry.
 
Ingredients
2 cups cabbage (grated)
½ cup coconut (grated)
2-3 button onion (sliced)
2 green chillies (chopped)
¼ teaspoon garlic (chopped)
¼ teaspoon turmeric powder
¼ teaspoon cumin seeds
Salt to taste
¼ teaspoon mustard seeds
A few curry leaves
2 teaspoon coconut oil

 
How To Cabbage Thoran
Heat the oil in a pan and splutter mustard seeds. Add button onions, green chilli and curry leaves and sauté for a couple of minutes. Mix cabbage, coconut, garlic, turmeric powder, cumin seeds & salt with your hands. Add this mixture to the pan & stir for 2-3 minutes. Sprinkle 1 tablespoon of water and cover & cook on low flame for 5-10 minutes until cabbage is cooked and is dry. Serve this cabbage thoran or cabbage stir fry with red rice and moru kachiyathu and you wont go wrong!

Notes: I had a single lonely looking carrot in the vegetable tray and decided to add that in too at the last moment. Hence the picture of a cabbage carrot mix thoran!

Psst: I even have this thoran as a filling for my sandwiches!
