A yummy dish, Avial is a Kerala specialty.
½ kg vegetables cut lengthwise into 1 inch pieces (drumstick, cucumber, yam, snake gourd, carrot)
½ teaspoon turmeric powder
4 green chillies (slit)
¼ cup water
½ cup curd
1 cup coconut (grated)
¼ teaspoon cumin seeds
1 stalk of curry leaves
Salt to taste
1 tablespoon coconut oil

How To Make Avial
Mix sliced vegetables with turmeric powder, salt, green chillies and water and cook on low flame till done. Coarsely grind the grated coconut with cumin seeds. Add this mix and curd to the vegetables and cook on low flame till everything is thoroughly mixed. Remove from heat, add curry leaves and lace with coconut oil.
