Aloo Baingan (Potato & Eggplant)

Aloo Baingan, an easy to prepare North Indian dish, goes well with all types of breads.
10 medium eggplants (cut into small squares)
3 tablespoon oil
1 teaspoon cumin seeds
1 onion chopped
2 large tomatoes (cubed)
2 large potatoes (cubed)
1 teaspoon coriander powder
1 teaspoon cumin powder
¼ teaspoon turmeric powder
½ teaspoon red chilli powder (optional)
Salt to taste
Coriander leaves


How To
Heat the oil on medium flame till hot. Splutter cumin seeds. Add the onions and sauté till translucent. Add the eggplant and potato and mix well. Fry for 2 minutes. Now add all the powdered spices and the tomato. Fry for 2-3 minutes. Sprinkle water on the vegetables and mix thoroughly. Cover the dish and cook till the vegetables are almost done. Remove the cover and stir. Cook till done. Garnish aloo baingan with fresh coriander leaves.
